Maple Bacon and Chicory Salad

Fancy a salad but don't want to feel hungry an hour later? This salad is definitely the one for you then. There's bags of flavour going on with the sweet and syrupy Maple cured bacon, roasted potato chunks, and zingy dressing - and all the sharpness of the chicory which also provides that all important crunch.

Ingredients

  • 2 chicory, leaves removed
  • 6 maple cured bacon rashers
  • 2 sweet potato, scrubbed and cut into small chunks
  • 1 handful of rocket leaves
  • 3 passion fruit, cut in half and pulp sieved but retained
  • 1 satsuma, rind and juice removed
  • 1 tbsp of extra virgin olive oil
  • 1 pinch of black pepper, to season

Method

  • Step 1

    Preheat the oven to gas mark 4, 180C, 350F.
  • Step 2

    Place the sweet potato on a baking tray in a single layer, drizzle with oil and season. Bake for about 30 minutes until soft. Cool slightly.
  • Step 3

    Preheat the grill and cook thye bacon rashers until crispy. Cool slightly and cut each rasher in half. Place the chicory and rocket into a bowl.
  • Step 4

    Whisk/ mix together the passion fruit juice plus 1tbsp of the seeds, satsuma rind, juice and oil.
  • Step 5

    Add the sweet potato and bacon to the leaves. Toss lightly. Add the dressing and serve.
