This simple, garlicky and delicious Marinated Feta is ideal for Med-style sharing spreads – try
it with crusty bread and other antipasti. The oil solidifies in the fridge, so you’ll need to

Ingredients
- 200g feta, chopped into cubes
- 1 unwaxed lemon, zest pared into 3 thick strips
- 3 (approx.) garlic cloves, sliced
- 5 black peppercorns
- 1 heaped tsp ancho chilli flakes
- 3 (approx.) sprigs oregano
- 3 (approx.) sprigs thyme
- 250ml (approx.) unfiltered extra-virgin olive oil
Method
Step 1
Put the feta into a 500ml lidded jar with the zest, garlic, peppercorns, chilli flakes, oregano and thyme.Step 2
Cover with the olive oil, pop the lid on and leave to marinate for 2-3 hrs or chill for up to 3 days.
