Mediterranean Sea Bass With Samphire And Watercress

Ingredients

  • 1 sea bass
  • 1 samphire
  • 2 tsp of olive oil
  • 1 steve’s leaves baby watercress and little leaves
  • 1 tsp of extra virgin olive oil
  • 1 tsp of balsamic vinegar
  • 1 lemon wedge

Method

  • Step 1

    Preheat oven to 180°C/160°C fan/gas 4 and line a baking sheet with baking paper.
  • Step 2

    Lightly brush 1tsp of the olive oil over both sides of the fish and lay them onto the baking sheet. Place them into the oven for 18 mins.
  • Step 3

    While the fish is cooking, heat a frying pan with the remaining oil. Add the samphire and a little salt and pepper. Cook for 2-3 mins until the samphire is just starting to wilt.
  • Step 4

    Toss the salad leaves in the extra virgin olive oil and balsamic vinegar.
  • Step 5

    Serve each sea bass alongside half the salad leaves and samphire, with a lemon wedge on the side.
