This aromatic Minty Masala Butter, from food writer and cookbook author Helen Graves, is a great way to add pizzazz to any number of everyday dishes. Try it melted slowly over roasted cauliflower, grilled fish or steak. It’s also delicious warmed in a pan and drizzled over houmous for a next-level dip. Ingredients

  • 2 cloves
  • 0.5 cinnamon stick
  • 1 tsp of cumin seeds
  • 1 tsp of black peppercorns
  • 2 cardamom pods, seeds only
  • 150 g of salted butter, softened
  • 1 tsp of coriander seeds
  • 0.5 tsp of fennel seeds
  • 1 large handful of mint leaves, finely chopped

Method

  • Step 1

    In a dry frying pan, gently toast the spices until fragrant.
  • Step 2

    Grind them, using a pestle and mortar or spice grinder, then mix well with the butter and mint leaves.
  • Step 3

    Scrape the butter onto non-stick paper, roll into a log, then cover and chill for 1 week or freeze for up to 3 months. Slice into discs as required.
