
Minty Masala Butter

This aromatic Minty Masala Butter, from food writer and cookbook author Helen Graves, is a great way to add pizzazz to any number of everyday dishes. Ingredients
- 2 cloves
- 0.5 cinnamon stick
- 1 tsp of cumin seeds
- 1 tsp of black peppercorns
- 2 cardamom pods, seeds only
- 150 g of salted butter, softened
- 1 tsp of coriander seeds
- 0.5 tsp of fennel seeds
- 1 large handful of mint leaves, finely chopped
Method
Step 1
In a dry frying pan, gently toast the spices until fragrant.Step 2
Grind them, using a pestle and mortar or spice grinder, then mix well with the butter and mint leaves.Step 3
Scrape the butter onto non-stick paper, roll into a log, then cover and chill for 1 week or freeze for up to 3 months. Slice into discs as required.
