Soft chunks of fragrant fruit nestle beneath a buttery topping in this Oaty Pear and Cardamom Crumble from Dina Begum – food writer and author of Made In Bangladesh. Adding oats to the topping dials up the crumble factor, while the cardamom-infused pears bring an aromatic twist that’s a mouthwatering match for custard, cream or ice cream. Time and servings

Ingredients
- 650g pears (approx. 6), peeled, cored and cut into 2 cm cubes
- 5 (approx.) cardamom pods, seeds crushed to a powder
- 100g light muscovado sugar, plus 2 tbsp
- 100g plain flour
- 50g rolled oats
- 100g cold unsalted butter, cubed
- 400g custard (optional)
Method
Step 1
Preheat the oven to 200°C/180°C fan/gas 6. Put the pear chunks into a 23 cm round or 20 cm square baking dish and toss with ¼ tsp cardamom and 2 tbsp of the sugar, spreading out evenly.Step 2
In a mixing bowl, combine the flour and oats. Rub in the butter with your fingertips until it resembles coarse breadcrumbs. Stir in the remaining sugar.Step 3
Scatter the oat mixture evenly over the pears and bake for 40-45 mins, until golden. Serve the crumble with custard, if liked (or try it with ice cream or cream). Keep leftovers covered and chilled in the fridge for up to 2 days. Reheat to warm through before serving.
