Ingredients
- 1 stick of organic celery, finely chopped
- 1 organic parmesan rind
- 1 tbsp of organic olive oil
- 2 cloves of organic garlic, finely chopped
- 0.5 organic stock cube
- 150 g of small organic pasta shapes
- 2 organic onions, finely chopped
- 300 g of organic courgettes, finely chopped
- 300 g of organic carrots, peeled and finely chopped
- 2 organic chicken legs, skin removed and discarded
Method
Step 1
Place the chicken in a saucepan with 1 litre of water and bring to the boil.Step 2
Reduce the heat to a simmer, cover the pan and cook for 20 minutes, then remove from the chicken and leave to cool. Reserve the liquid.Step 3
Heat the oil in a large saucepan and cook the onion for 3-4 minutes until softened. Add the courgettes, celery and carrots, stir, and then cover and cook over a gentle heat for 5 minutes, shaking the pan occasionally to mix.Step 4
Measure out the chicken cooking liquid and make up to 1 litre, if necessary, with water, then add to the vegetables along with the stock cube and the parmesan rind.Step 5
Bring to the boil and then reduce the heat to a gentle simmer and cook covered for 10 minutes.Step 6
Strip the chicken meat from the legs, discarding the bones.Step 7
Chop the meat and add to the pan along with the pasta.Step 8
Cook for a further 10-12 minutes until the pasta is tender. Remove the parmesan rind and discard. Season to taste and serve.
