
Pan-fried Cod with Parmesan Mash

Ingredients
- 450 g of potatoes, cooked and mashed
- 100 g of crème fraîche
- 0.5 lemon, juice of
- 150 g of parmesan cheese
- 2 tbsp of olive oil, half for the mash and cooking, half for the dressing
- 1 pinch of salt, to season
- 2 tbsp of sundried tomato paste
- 4 cod fillets
- 1 pinch of ground black pepper, to season
- 1 tbsp of plain flour
Method
Step 1
To the cooked and mashed potatoes add the parmesan cheese, crème fraiche, half of the extra virgin olive oil, seasoning and combine together.Step 2
Lightly flour and season the cod and cook in olive oil for 3 minutes on each side over a medium heat, taking care not to burn the flour.Step 3
Mix the sundried tomato paste with the remaining olive oil and the lemon juice.Step 4
Place the mash in the centre of the plate, sit the cod on top and drizzle the sundried tomato dressing around the mashed potatoes.
