Cook and author Dominic Franks created this simplest of puds, which uses only 3 ingredients and involves next to no prep. “In these Persimmon Frozen Custards, the whole fruit is frozen, then allowed to defrost until the flesh becomes a wonderful jammy, sorbet-like treat.” Allow 5 hours for freezing and defrosting.Time and servings

Ingredients
- 4 very ripe persimmons (or 8 if small)
- 1 (approx.) lime, finely grated
- 1 (approx.) good grating of nutmeg
Method
Step 1
Put the persimmons on a tray and freeze for at least 4 hrs.Step 2
Defrost the persimmons at room temperature for around 30 mins, depending on how big they are.Step 3
Slice off the tops, then grate over some lime zest and nutmeg; serve immediately with spoons for scooping out the chilled flesh.
