This easy Pesto Egg Mayo Sandwich is a great way to elevate your lunch. Bright, creamy and packed with flavour, the filling also makes a tasty toast topper and is delicious in a wrap.

Ingredients

  • 6 large eggs
  • 2 tbsp crème fraîche
  • 1 tbsp pesto
  • 6 slices focaccia or bread of your choice
  • 2 tbsp crispy onions (optional)
  • 2 handfuls watercress (optional)

Method

  • Step 1

    Cook the eggs in boiling water for 10 mins, then plunge into an ice bath; peel.
  • Step 2

    Chop and mix with crème fraîche, salt and pepper, then ripple in the pesto.
  • Step 3

    Spread on sliced focaccia and sandwich with crispy onions and watercress, if you like.
