
Poached Fish In Parsley Sauce

This simple dish of poached fish in parsley sauce has been given a luxurious twist by poaching the cod loin in both milk and white wine before being coated in a rich parsley sauce. A deliciously easy meal to impress family and friends any day of the week.Time and servings

Ingredients
- 300 g of cod loin (any firm white fish will work equally well)
- 200 ml of whole milk
- 60 ml of white wine
- 1 lemon, halved
- 4 garlic cloves, finely chopped
- 1 tsp of whole black peppercorns
- 25 g of unsalted butter
- 25 g of plain flour
- 2 tbsp of grated cheddar cheese
- 1 handful of flat-leaf parsley, leaves only, finely chopped
- 0.5 tsp of english mustard
Method
Step 1
Preheat the oven to 180°C/160°C fan/gas mark 4. Place the cod loin in a baking dish. Add the milk, wine, 1 tsp of the sea salt, ½ the chopped garlic, all of the black peppercorns and lemon. The liquid doesn’t need to cover the fish entirely.Step 2
Cover with foil and place in the oven for 20 mins. Remove from the oven and set aside, leaving the dish covered to keep warm.Step 3
In a hot pan, melt the butter, then add in the flour, mixing together with a wooden spoon to form a roux. Strain the fish poaching liquid through a sieve into the pan and mix well. Add the cheese, 1 ½ tsp salt, ½ tsp coarse black pepper, parsley, mustard and remaining garlic then bring to a boil for 1 min. Reduce the heat to a simmer for 5 mins or until the sauce has thickened.Step 4
Serve immediately with mashed potatoes and your favourite green vegetables.
