
Roasted Brussels Sprouts with Crispy Parmesan

Ingredients
- 40 g of parmesan
- 500 g of brussels sprouts
- 4 garlic cloves
- 4 tbsp of pine nuts
- 4 tbsp of olive oil, plus 2 tbsp to serve
- 1.5 lemons, zest and juice of
Method
Step 1
Preheat the oven to 195C/175F/Gas 5. To crisp the Parmesan, cover two baking trays with non-stick greaseproof paper, grate the cheese finely and evenly over the top and put in the oven for 8-10 minutes.Step 2
Turn the oven up to 200C. Cut the sprouts in half, make a little slit in the core of each one and place into a roasting dish. Mix the crushed garlic, pie nuts and zest of 1 lemon with the olive oil, drizzle over the sprout and place in the oven for 30-35 minutes.Step 3
Remove and stir in the 2tbsp of oil remaining, the rest of the lemon zest and juice and seasoning. Sprinkle the crisped Parmesan over the top.
