
Roasted Sprouts and Chestnuts with Sprout Dust Butter

We’re transforming our sprouts with a little pot of magic this year. ‘Sprout dust’ is a spice mix made with ginger, garlic, chilli, cumin, coriander, cardamom and paprika, and is guaranteed to take these seasonal beauties to the next level. This recipe makes a great side dish for Christmas dinner but deserves space at the table all throughout winter, as far as we're concerned. Time and servings

Ingredients
- 600 g of brussels sprouts (or you can use kalettes)
- 180 g of cooked chestnuts
- 1 garlic clove, finely chopped
- 2 tbsp of olive oil
- 40 g of salted butter, (or you can use vegan margarine)
- 1 tbsp of ross & ross brussels sprout dust
Method
Step 1
Heat the oven to 200°C/180°C fan/gas 6. Toss the sprouts or kalettes with the chestnuts, oil and seasoning. Roast for 20-30 mins, tossing halfway through.Step 2
Heat the butter in a saucepan, then stir in the garlic and sprout dust and cook for 30 seconds, until fragrant. Turn the sprouts and chestnuts out into a bowl and pour over the butter. Taste and season if needed.
