Ingredients
- 4 tbsp of extra virgin olive oil
- 560 g of runner beans, stringed and sliced at an angle
- 190 g of fresh peas
- 250 g of roasted red peppers, (from a jar) drained well and sliced
- 1 clove of garlic, grated
- 150 g of chorizo, chopped into chunks
- 1 tsp of wholegrain mustard
- 0.5 tsp of honey
- 1 tbsp of red wine vinegar
Method
Step 1
Heat 1tbsp of the olive oil in a pan and gently saute the chorizo for 2 mins, until golden.Step 2
Add the peppers and cook for around 1 min more to soak up the juices.Step 3
For the dressing, mix the mustard, honey, garlic, vinegar and the remaining 3tbsp of oil together in a screw-top jar. Put the lid on and shake well to combine.Step 4
Blanch the beans and peas in a pan of boiling, salted water for 2 mins. Drain well and tip back into the empty pan. Add the chorizo and dressing, mix well and season to taste. Serve with bread for lunch or as a side with roast chicken.
