
Sauteed King Prawns with a Minty Pea Dip

Pea and mint really sing in this super easy, fresh-tasting dip. All you need to make it are 10 minutes and a handful of freezer and store cupboard staples. It's great to serve at a get-together with friends, and easy to whip up for a quick lunch or snack. We've served it with king prawns dunking, but it would be equally good on toast to make bruschetta.Time and servings

Ingredients
- 250 g of frozen peas, defrosted
- 0.5 bunch of mint leaves
- 1 handful of spinach
- 25 g of sunflower seeds, toasted
- 1 small of garlic clove
- 0.5 lemon, juiced
- 2 tbsp of extra virgin olive oil
- 30 g of parmesan, grated
- 1 olive oil
- 300 g of raw king prawns
Method
Step 1
In a blender, blitz the peas, mint, spinach, sunflower seeds, garlic, lemon, extra virgin olive oil and parmesan together. Loosen with a touch of water if too thick for your liking. Season and spoon into a serving bowl.Step 2
Heat a drizzle of oil in a frying pan on a medium heat. Add the prawns, stirring until pink and cooked through. Season and add an extra squeeze of lemon, if you like.Step 3
Serve the pea dip in a bowl with the prawns for dipping.
