Spiced Apple Quinoa Porridge

“I love the creaminess and gentle spice of this vegan Spiced Apple Quinoa Porridge, which – as well as being delicious – brings benefits to women in midlife,” says Dr Linia Patel, nutritionist and author of Food For Menopause. “The quinoa adds complete plant-based protein, while chia and apple add fibre, and soya milk provides phytoestrogens (plant compounds with a similar structure to oestrogen). It’s also a great way to use up leftover quinoa.” Ring the changes by topping it with a different fresh fruit, plus mixed seeds or grated dark chocolate. Ingredients

  • 50g cooked quinoa
  • 30g rolled porridge oats (check for gluten-free)
  • ½ eating apple, ½ grated, ½ sliced
  • 1 tbsp chia seeds
  • 1 small pinch sea salt flakes
  • 1 small pinch ground allspice (or cinnamon and/or nutmeg)
  • 250ml no-added-sugar soy milk, plus extra to serve
  • 1 orange, zested to give ¼ tsp zest
  • 1 tbsp maple syrup

Method

  • Step 1

    Put the cooked quinoa, oats, grated apple and chia seeds into a pan with the salt, allspice and soy milk. Bring to a simmer and cook for 10 mins, stirring, until the oats are tender. Loosen with a splash more soy milk if the porridge thickens too quickly.
  • Step 2

    Pour into a bowl, adding a little more soy milk, if liked; top with the grated zest, maple syrup and sliced apple.
