
Sweet Potato Pizza with Crispy Sausage, Caramelised Onion and Goat's Cheese

Love pizza? Add this family favourite with a twist to your midweek repertoire. Crispy sausages, sticky caramelised onions and crumbled goat’s cheese make up this everyday, delicious pizza. What makes it particularly special is it’s sweet potato base, just be sure not to mash the sweet potatoes too smoothly – as this texture will bind your dough together. You can get as fun and inventive as you like with the toppings or even make it vegan with vegan cheese and garlicky mushrooms.Time and servings

Ingredients
- 750 g of sweet potatoes, peeled and chopped
- 100 g of plain flour
- 100 g of ground almonds
- 1 tsp of oil, plus extra for the tray
- 2 large red onion, sliced
- 5 sausages, meat squeezed out of the casings
- 340 g of tomato passata
- 100 g of cherry tomatoes
- 125 g of goat's cheese, crumbled
- 1 small bunch of oregano leaves, to serve
- 1 small bunch of basil leaves, to serve
Method
Step 1
Preheat the oven to 220°C/200°C fan/gas 7. Add the chopped sweet potatoes to a pan of salted boiling water and cook for 15 mins until soft but not mushy. Drain well and add to a large mixing bowl with the flour and ground almonds and a large pinch of salt. Mash until combined and starting to get smooth.Step 2
Line a large rectangular baking tray with baking parchment and lightly coat with oil. Spread the sweet potato dough over the lined tray until smooth. Bake in the over for 5-10 mins to lightly brown.Step 3
Meanwhile, in a pan set over a low-medium heat, cook the red onions with 1 tsp olive oil, moving regularly until softening. Turn up the heat to medium-high and add the sausagemeat and fry for 2-3 mins or until crispy and turning golden.Step 4
Once the pizza base is cooked, spread the passata over the base, add the sausage and onion mixture, cherry tomatoes, scatter over the goat’s cheese and top with oregano.Step 5
Return to the oven for 12-15 mins or until the pizza is golden and the edges are starting to crisp. Finish with a scattering of fresh basil.
