
Tomato and Celery Soup

Ingredients
- 1 onion, finely chopped
- 1 garlic clove, skinned and crushed
- 3 celery sticks, trimmed and sliced
- 1.2 l of vegetable stock
- 2 tsp of fresh thyme, chopped plus some to garnish
- 1 tbsp of olive oil
- 800 g of chopped tomatoes
- 1 pinch of pepper
- 50 g of kellogg's all bran
Method
Step 1
Heat the oil and cook the onion, garlic and celery over a low heat for 5 minutes.Step 2
Stir in the tomatoes, All-Bran, thyme and stock.Step 3
Bring to the boil and simmer for 20-25 minutes until cooked.Step 4
Then puree the soup in a blender or food processor, season to taste and serve garnish with fresh thyme or parsley.
