Ingredients
- 150g plain flour
- 1 tsp fine sea salt
- 3 large eggs, beaten
- 150ml semi-skimmed milk
- 4 tsp beef dripping (approx.)

Step 1
Sift the flour into a bowl with the salt. Whisk in the eggs, followed by the milk and 50ml cold water to make a smooth batter; set aside at room temperature for at least 15 mins.Step 2
Preheat the oven to 230°C/210°fan/gas 8. Dot the beef dripping into two 4-hole yorkshire pudding trays (or use a 12-hole tray for smaller yorkshires); place inside the oven until sizzling hot.Step 3
Working fast, pour the batter into the holes evenly, without overfilling. Bake for 15 mins or until risen, golden and crisp. Don’t open the door until they’re ready to come out!Step 4
