Red Thai Curry
Serves 2
4 tablespoons Blue Dragon Red Curry Paste,
1 tablespoon vegetable oil,
400 Blue Dragon Coconut Milk,
2 thinly sliced chicken breasts,
1 aubergine, cut lengthways into quarters then sliced thinly.
Method:
1. Fry the paste in a pan with the oil for 2 minutes.
2. Add the Coconut Milk and mix with the paste.
3. Once the milk is hot, add the chicken and aubergine.
Cook until tender.
Cooking tip: Try adding other vegetables such as slices of butternut squash.
This product may naturally solidify when cold. Warming will return it to a liquid state.

Serves 2
4 tbsp Blue Dragon Thai Green Curry Paste
1 tbsp vegetable oil
400ml Blue Dragon Coconut Milk
400g chicken breast, thinly sliced
A handful of mangetout or green beans
Blue Dragon Fish Sauce and palm or caster sugar to taste
Sizzle: Fry your meat until cooked through, reduce heat to medium and gently fry the Thai paste for a minute.
Stir: Add to coconut milk and stir until paste is dissolved and bring to the boil. Add your vegetables and simmer for about 10 minutes until cooked through.
Enjoy: Serve with steamed rice and enjoy.

nice enough
Not my usual brand but nice enough in a pinch
Not free of other stuff but does taste good
I find this coconut milk better than some of the cheap supermarket own versions, and it always goes well in my Thai curry’s. It isn’t cheap, but it does taste good. The ingredients aren’t perfect and there are lots of additions so I will try to find one with cleaner ingredients, but I do like the taste of this one.
Coconut Extract, emulsifiers and stabiliser..
It's not coconut milk at all, extract of coconut is emusified and stabilised to look and taste like milk.. but its not wholefood its an ultra processed food. The Biona one is real coconut plus water. Don't eat this one.
