Preparation and Usage
1. Combine the batter mix with 225ml of cold water (less for a thicker batter)
2. Stir well to remove most of the lungs.
For best result do not leave to stand - instead use the batter immediately.

1 pack of Tiger Prawns with tails on (or aubergine, butternut squash, courgette, cauliflower)
Oil for frying e.g. vegetable oil

To make Tempura Prawns/Vegetables...
Slice: Slice vegetables or prepare prawns by leaving tails on and making a slit along the belly to prevent them curling during cooking. Heat the boil in a wok until sizzling hot.
Dip: Make up tempura batter according to pack instructions. Coat the prawns or vegetables in the batter.
Sizzle: Deep fry until prawns are cooked or golden brown, approximately 2-3 minutes. Drain on kitchen paper and serve immediately with Blue Dragon Sweet Chilli Dipping Sauce.

(Serves 2)
112g Tiger prawns, with tails on
Oil suitable for deep frying
75g Blue Dragon Tempura Batter Mix
112ml Ice cold water
25g Flour for dipping
Method:
1. Prepare the prawns by leaving their tails on and making a slit along the belly to prevent them curling during cooking. Dry on paper towels.
2. Heat the oil in a wok or deep-fat fryer to 160°C/325°F.
3. Make up tempura batter according to pack instructions.
4. Coat the prawns in the flour, then the batter.
5. Deep fry until golden brown, approximately 2-3 minutes.
6. Drain on a rack and serve immediately with Tentsuyu Sauce.

Really Good
Makes a lovely tempura batter, I got four servings from the pack, 75g a time for two people, I also used ice cold sparkling Perrier water to make the batter.
easy mix, saves time
For fishy stuff we used half mix with lemon jest added & a touch of seasoning in the rest for cooking sliced chunky veg. Good, quick, tasty finger food. . Just a jug to wash & no real weighing out or mess.
Good results
I've tried my own tempura batter, and failed so many times, so decided to give this a go. I got pretty good results, but beware if the oil isn't hot enough things sink to the bottom, stick on the bottom and get very oily. I used a little less water than it stated to make it a bit thicker and also used a cocktail stick to transfer - pop the stick in lightly, hold in oil for a few seconds until it fluffs up and floats and then twist cocktail stick out. I didn't find it salty at all, infact we decided it needed more saltiness so dipped the vegetables in soy and sesame oil to eat. The only thing that was a little strange was that try as I might I could not get the lumps out of the batter, despite bashing away at it for ages. Will definitely use again.
Really useful
Mixes quickly and easily. Seems to be idiot proof in that it goes crispy and golden even if you are a useless cook like me. Impressive crispy vegetables and even tried banana blossom. Loved it.

This is more like batter for Chinese food rather than Japanese tempura. Batter is too hard and salty! I ended up binning the leftover batter...
