Galangal, lemongrass, garlic and shallots are ingredients you'll find in most thai curry pastes as they form the base flavour. Lemongrass and coriander add to the aroma, while galangal is a root similar to ginger - but much more potent. The difference between massaman and other Thai curries lies in the use of spices, such as clove, cumin, cardamon, nutmeg and cinnamon.
The additional star anise gives additional flavours and aromas, the chilli for added heat and the whole peanuts give a great crunchy texture.

Preparation and Usage
1 Blue Dragon Thai Massaman Curry Kit
1 tbsp vegetable oil
300g Diced beef, or sirloin cut into thin strips
2 Small potatoes, cut into 2-3cm cubes
1 Small onion, roughly chopped
For an authentic Thai massaman curry with just 5 ingredients...
1 Sizzle -Fry the onions for 1 minute then add the meat and fry until sealed, then add the paste, gently frying for a further 1 minute
2 Stir-Add the potatoes, coconut milk and 100ml water bring to boil then simmer for 10 mins.
3 Simmer-Add the peanuts & dry spices and simmer for a further 5 mins, serve with steamed rice and enjoy!

Blue dragon Thai Massaman Curry
A light, fragrant curry native to Thailand. The secret to a great Thai curry is the freshness and balance of Thai ingredients that are ground into paste. At blue dragon, we grind our paste in Thailand to capture all the rich flavours, include galangal, lemongrass, garlic and shallots.
Sizzle - Get your wok smoking hot and add a splash of oil, add the onion and fry for 1 minute then add the meat and fry until sealed. Reduce heat to medium, add the paste, stir through and gently fry for a further 1 minute.
Stir - Add the potatoes, coconut milk and 100ml water, bring to boil stirring until the paste dissolves then simmer for 10 mins. Don't worry if the coconut milk has separated or solidified, this is natural and will return to normal when heated and stirred.
Simmer - Add the peanuts & dry spices and simmer for a further 5 mins or until-potatoes are cooked through, serve with steamed rice and enjoy!

1 tbsp vegetable oil
Blue Dragon Thai Massaman 3 Step
300g beef fillets, cut into thin strips
100g or 1-2 small potatoes, cut into small cubes
1 small onion, roughly chopped
100ml water
Blue Dragon Fish Sauce and palm or caster sugar to taste
Enjoy!!
Heat: Get your pan hot, then add a splash of vegetable oil.
Sizzle: Fry your meat until cooked through, reduce heat to medium, add your paste and gently cook for a minute to release the flavours & aromas.
Stir: Add the coconut milk and water and bring to the boil. Add the vegetables, then simmer for about 20 minutes until all the flavours are infused and everything is cooked through. Add the dry ingredients for the last 10 minutes of cooking.
Enjoy: Serve with steamed rice.

Great kit
This is great for a quick and easy tasty meal
Lovely
Really tasty. I made this with about 200g of Quorn 'beef' strips, a handfull of brussel sprouts, handful of new potatoes, and shallots. At the end I threw in some straight to wok noodles. Once ready I pimped it up by sprinkling some cinnamon 'munchy seeds' on top. It was beautiful! A wonderful flavour that provided three good sized portions. Both the noodles and the veggie protein soak up the liquid (and flavour- a good thing! ) so I kept a lid on whilst cooking and added a splash of water when reheating. Would definitely recommend, although I would leave the dried chilli out if I was cooking it for my mum!

Delicious and easy to make
Brilliant
They call the Massaman the King of Curries and this really lives up to it. I have only had a couple of Massaman's better than the Blue Dragon curry and they were at very expensive boutique Thai restaurants. This is very good indeed, and near perfect for a curry kit.

Another great kit from this brand. We used to use another kit brand but we feel these are much more flavoursome and actually easier to use! More kits please Blue Dragon!
peanuts - please bring back the paste!
Theyve stopped sticking the small masaman paste pots which we love. Im allergic to peanuts so cant have the kit as a sub. It sucks.
