Preparation and Usage

Ginger Biscuits (Makes about 20 biscuits)
150g butter, softened
100g caster sugar
3 tablespoons dark brown sugar
2 tablespoons molasses
2 whole eggs
170g wholemeal plain flour
2 teaspoons bicarbonate of soda
2 teaspoons ground ginger
1 teaspoon ground cinnamon
1 teaspoon mixed spice
2 tablespoons stem ginger,
chopped small (about 0.5cm)
a pinch of salt
caster sugar, for dusting
Preheat oven to 180°C/gas 4 and grease two baking trays with butter. Put the softened butter and sugars into a bowl and cream together until pale and fluffy. Add the molasses, then gradually beat in the eggs. Fold in the flour, bicarbonate of soda, spices, stem ginger and salt.
Spoon dessertspoonfuls of the mixture on to the prepared baking trays and flatten slightly into the rounds of about 1cm thick with the back of the spoon. Put into the preheated oven and bake for abou 10-15 minutes, until golden. Remove from the oven and lightly sprinkle with caster sugar while still warm. Cool slightly before removing to cake rack.
