Filotea Tagliatelle is a flat pasta that is slightly wider than Fettuccine. Its ideal dressing is a ragu meat sauce.
Filotea produces dry egg pasta in the Marche region (central Italy), using the finest raw materials and following a unique recipe and artisan preparation methods. The result is an egg pasta that is reminiscent of a homemade one, traditionally prepared by grandmothers. It is light and easy to digest, while its textured surface helps to absorbe the sauces, thus exalting the flavour of all the ingredients. Store in a cool, dry place. Best before: see back of pack.
Preparation and Usage
Hob - from ambient. Bring a large pot of water to a boil, add salt to taste. Add the pasta and cook until al dente, about 4 minutes. Then, drain the pasta and immediately add your favourite condiments or sauces.

Great with bolognese
Made Marcella Hazan’s bolognese the other day and I wanted to use special pasta as we had guests. It’s tasty. Even better when it’s on sale.

Just made this today. What can I say, possibly the best pasta I have ever made at home. Boiled it for about 7 mins rather than the recommended 4.

Game changer!
Having been sent this as a freebie to review, I wasn't in a hurry to use this, but what a difference when I did! Beautiful texture, and a finish that just seemed to keep the sauce stuck to the pasta. Won't be replacing my regular pasta, but will definitely keep some to hand for when we've got a really good sauce.
