History
The colours Gold and Azure are heraldic symbols linked to the Bee since the ancient times. Its symbolism is particularly rich. Traditionally, it represents the vital energy, i.e. the soul. The azure in heraldic symbolism was called "sapphire and celestial colour". This is certified organic and "Bee Friendly", a label that aims to protect bees and pollinators.
Regional Information
Gold and Azure also symbolize the sun and the Mediterranean which characterize the terroirs of the South of France. This reminder is where the grapes grow, in the heart of the Languedoc-Roussillon.

Vinification Details
The different grape varieties are de-stemmed and the maceration period lasts for about 3 weeks. The extraction work (pumping over, the rack and return and the pigeage), is carefully adapted to each vat in order to favour a good extraction of varietal aromas and a silky and dense structure.

Glorious
Just finishing this as I type. we've all enjoyed this with Easter pork Sunday. its gone down a treat. would definitely buy again. Lovely flavour, herby and yes that hint of liquorice.
