Very healthy grains, nutritionally wise, high in fibre and protein all in one. I soak these overnight and add to my pride in morning.

Used instead of rice for a rice pudding
Thanks to an Ottolenghi recipe, we now make a delicious version of rice pudding with this barley, that is rich and just a little bit chewy in a very good way. It is so good that we might have had it for breakfast the next day. Great ingredient that carries the flavours and feels like it might be doing you a little bit of good too.

Cooking time is about 1h
Read the cooking instructions carefully, it asks you to simmer for 50 min after bringing to boil. It's so long! It might work if you are doing meal prep, but not for last minute dinner.
