Chocolate cookies with green chips as polka dots. Makes 4-5 dozen 2" cookies
2 cups (12oz) Guittard semisweet chocolate chips
1/2 cup (1 stick) butter
3 large eggs
1/2 cup sugar
1/8 teaspoon salt
2 teaspoons vanilla extract
1-1/2 cups unsifted all-purpose flour
1/2 teaspoon baking soda
2 cups (12oz) Guittard Green Mint Baking Chips
Preheat oven to 350°F. Line cookie sheets with parchment or use ungreased. Melt semisweet chips and butter, stirring constantly until smooth. Set aside to cool. In large bowl beat eggs, sugar, salt and vanilla until light. Blend in melted chocolate then flour combined with baking soda. Stir in green mint chips and chill for 10-15 minutes or until stiff. Drop rounded teaspoonfuls onto cookie sheets. Bake 8-10 minutes; cookies will be soft in center but will harden as they cool.
Green Mint Brownie Muffins
Moist, fudgy dessert between brownie, muffin, and cupcake. Makes 1 dozen 2-1/2" muffins
2 cups (12oz) Guittard Semisweet Chocolate Chips
1/2 cup + 2 tablespoons butter
4 large eggs, lightly beaten
3/4 cup sugar
1 teaspoons vanilla extract
1 cups unsifted all-purpose flour
1 cup (6oz) Guittard Green Mint Baking chips
Preheat oven to 350°F. Line 12 muffin cups with paper liners.
Melt semisweet chips and butter in top of double boiler over low heat, stirring constantly until melted and smooth. Remove from heat. Beat in eggs, sugar, and vanilla. Stir in flour just until incorporated. Fill lined muffin cups half full. Drop about 1 tablespoon mint chips into each muffin cup, gently pressing into batter. Divide remaining batter evenly among muffin cups, completely covering chips. Bake 25-30 minutes; do not overbake. A toothpick inserted in center will still have moist crumbs clinging to it. Remove muffins from pan and cool on rack.

Amazing when in moderation
I love these! They are bright mint green which means my kids LOVE them. However they are pretty strong. Ive found we like them better when we use less in cookies than we would normal chocolate chips.
Absolutely Stunning!
These chips are delicious, they're the perfect amount of sweet so you don't over sweeten the bake or the topping for an ice cream sundae and the lovely green colouration is very pleasing to the eye.
great in brownies
The mint chip brownies I made were a huge hit on Christmas! Theyre maybe a tad too sweet, so next time Id take a tad of the sugar out of the recipe. Id buy them more often but theyre so expensive, so Ill save it for when they go on sale again.

My kids loves these in their favourite chocolate cookie recipe instead of the normal chocolate chips. I wasnt convinced but after trying was totally converted! They are also an intriguing hue of green but not lurid!!
