Suggested Methods of Cooking
Place 250g(8oz) into 1.21ltr (2.25 pints) of boiling water stir and return the water to rolling simmer.
Cook uncovered for 12 - 14 minutes until tender.
Drain water and sieve with boiling water then serve

Rice and Peas
Ingredients:
400g of Island Sun Red Kidney beans
200g of Island Sun creamed coconut block
3-4 tsp salt
400g butter
2 whole scotch bonnet chilli
2 onion chopped
2 fresh thyme sprig
3 garlic clove
2 tsp Island Sun All-purpose seasoning
500g Long grain rice.

Recipe:
1 Place beans, garlic, chopped onion, salt, butter, chilli, thyme and 1 liter water in a large (8-quart) pot and bring to a boil for 10-15 minutes. Add Island Sun All purpose seasoning and grated creamed coconut. Reduce to a simmer and cover, simmer for another 10 minutes until the mixture gets thick.
Rinse the rice under cold running water 2 to 3 times. Drain water and place rice into boiling water. Make sure the liquid is 2.5in above the level of the rice. Stir and return the water to rolling simmer.
Cook uncovered for 7-10 minutes until tender. Drain water and sieve with boiling water then.
Serve cooked beans over rice.
Serve 6.
