Stir-Fry Chicken with Egg Fried Rice
Flavour Kit
200g chicken breast, sliced into approx 3cm strips
3 Baby pak choi, roughly chopped
Microwave bastami rice
2 Eggs, beaten
150g mushrooms, sliced
Simple Swaps
Replace the chicken for prawns
Cook the chicken marinated in the sauce on skewers and stir fry the vegetables with the rice
Make an all veggie stir fry with mushrooms, peppers & baby corn
Prep time 10 mins
Cook time 10 mins
1 Heat 2 tbsp oil in a wok on a high heat, add the mushrooms and chicken, pan-fry for 5 minutes until brown on all sides or until the chicken is cooked.
2 Add the stir fry sauce and the pak choi and stir fry for another minute.
3 Meanwhile, add 1 tbsp oil to a separate pan, add the rice straight from the pack and cook on high heat for 2-3 minutes.
4 Add the rice seasoning and cook for a further minute then add the beaten eggs and stir fry for another minute.
5 Serve the rice topped with the chicken.

Quantities all wrong
Not enough sauce and too much dry seasoning. Very poor value.
Good & very easy to follow
I added extra veggies and substitutes the pok Choy for courgette. It was really yummy and the fried rice was nice. I think there was enough sauce to evenly coat the chicken and veggies.
Nice but more for 1 rather than 2
Like the other review, I also liked the flavours. I think that reviewer is saying she thinks the amount of sauce and seasoning is small, but I actually thought the amount of food was small. It could be partly because I substituted the chicken for prawns, but I didn't really see how it could feed 2.

nice flavour but very small amount. I ended up having to add lots of my own honey and soy sauce to make it go further, which made me realise I could make this myself for much cheaper, especially with a bit of Chinese 5 spice!
