Suitable for freezing. Freeze by date mark shown and use within 1 month. Defrost thoroughly before use. Do not refreeze once defrosted and consume within 1 day.
Instructions
Oven:
Before cooking: Preheat oven to 240ºC / Fan 220ºC / Gas 9. Place the joint on a chopping board. Rub the rind dry with kitchen roll and cover with 2 tablespoons of salt, working into the cuts. Leave at room temperature for 30 mins. Rub all the salt off the joint and from between the cuts. Pat dry, lightly cover the rind with 1 teaspoon of salt. Cook for 30 minutes. After 30 mins, reduce the temperature to 180ºC / Fan 160ºC / Gas 4 and cook for 30 mins per 500g. Check food is piping hot and juices run clear. Allow the joint to rest for 15 minutes before carving. Do not reheat.
Pulled Pork:
Preheat oven to 180ºC / Fan 160ºC / Gas 4. Remove all packaging. Place shoulder joint into an ovenproof dish with 500ml of water and cover tightly with foil. Place on the middle shelf of the oven to cook for 3 hours. Rest for 15 mins and remove string and rind before shredding the joint apart using 2 forks.

Too much fat
It's more like pork belly rather than the shoulder...
BIG LUMP OF FAT..
I ORDERED A SHOULDER OF PORK NOT A LARGE LUMP OF FAT - WHICH WAS WHAT I RECEIVED - SADLY ENDED UP IN THE BIN...
Really bad
disgusting just a lump of very fatty bit of Pork,, won't ever buy again the whole thing marbling with fat was not even a slice that was safe to eat.
Slow cooked to perfection
We slow cooked this using Jamie Olivers pork shoulder recipe and it was amazing!! So juicy and tender and the crackling melted in our mouths. I will often get a more expensive organic option but this was lovely.

but it was quite tasty and the crackling was good. would have been better made into sausages.
expensive fat !
Received 1.7 kg joint. Sadly more fat than meat. Fat was Approx 1 1/2 inches deep around the meat. Wont be it trusting again an expensive mistake
