Ready for roasting, cook slowly on a low temperature for a tender and deliciously flavoured joint.
Each 1kg of raw lamb will provide around 5 servings of 120g lamb roasted, then trimmed of fat.

The colour of the meat will gradually return on opening and there may be a slight odour which will quickly disappear. This is normal and does not affect the eating quality.

Once opened, use immediately.
Do not exceed the Use By date.
Suitable for freezing. Freeze on or before Use By date. Use within 1 month. Defrost thoroughly before cooking and consume on day of defrosting. Do not refreeze.
Instructions
Oven: 170ºC / Fan 150ºC / Gas 3
40 mins per 500g + 40 mins
Preheat oven.
Allow the meat to rest at room temperature for 10 minutes before cooking.
Place the meat into a roasting tray, cover with foil loosely and place in the centre of oven.
Remove foil for the last 30 mins of the cooking time.
Cook thoroughly until the juices run clear. Ensure the surface of the meat is thoroughly cooked.
Leave the lamb to rest in a warm place for 10-15 mins before carving.
Do not reheat once cooled.

Delicious
Cooked for 4.5 hours at 160 - incredibly tender & flavoursome. More than enough for 4 people. Very little wasted.
inconsistent and tough as old boots when bad
Ive bought this a few times and its always been lovely. However, last weekend I bought 2 and cooked them side by side in the same roasting tin for 5 hours at 140C. One was ok (but not as good as previous times) and the other one was inedible - dry and tough as old boots. I shall be trying the M&S version next time.
Tough and chewy
Bought this product so many times and its always been lovely, however this time I cooked it for 6 hours the same way I normally do and to my dismay it was chewy and tough, so disappointing.
lovely Sunday roast
slow roasted this for 3 hours in a Dutch oven with 250ml of water in the bottom along with a bulb of garlic, onion and fresh rosemary with the lid tightly on at 160, took lid off and heat turned up to 220 for another 30 mins to brown the top. Rested it for 30-45 mins and it shredded beautifully, tasted great too.

This was on my favourites and I have ordered several times and it has always been consistently good. I slow cook and its usually tender and falls off the bone. The one I got delivered on 12 April 2024 which I cooked on 14 April for our Sunday roast was absolutely awfula minimal amount of decent meat and the rest practically inedible unless you like sinewy chewy meat. The bone was huge so the weight was mostly bone. I feel ripped off at paying over £17 for this rubbish. I rarely leave a negative review but this is truly awful and I will probably never buy again. Ocadoyou need to address this as we are now consistently getting our meat from an upmarket butcher whereas we used to get all our meat from you.
Mutton
I slow roasted this shoulder on the rotisserie for 6 hours, basted it every half hour with butter, thyme, rosemary and garlic. Got it up to 95deg internally so I was guaranteed shredded lamb. It smelt lovely. It looked lovely. But trying to shred it omg, It was full of sinew. The worst cut of lamb I have ever had, it was probably mutton not lamb tbh.
