"A kitchen without dried chilli flakes would be as alarming to me as a kitchen without lemons! I add a fiery freckle of them to almost everything I cook, it sometimes feels like. And for good reason: they bring a rich warmth instantly and effortlessly. One of my favourite standby suppers is that Italian classic, Spaghetti Aglio Olio, in which you toss the cooked, drained pasta in olive oil, minced garlic and chilli flakes (though I like a carpeting of freshly chopped parsley, too) and I much recommend a sprinkling over a fried egg! I add a small pinch over onions, once cooked (along with grated lemon zest) to bring pep and zing to soups, stews and sauces, and reach for them with more gusto when I’m after seriously searing heat.
