History
The philosophy of Oyster Bay is to produce fine, distinctly regional Super Premium wines that are elegant and assertive, with glorious fruit flavours. Oyster Bay produces wines from the renowned regions of Marlborough and Hawke's Bay.
Regional Information
Hawke's Bay is one of New Zealand's warmest grape-growing regions. From Crownthorpe's sun-drenched terraces to the stony soils of the Gimblett Gravels, Hawke's Bay produces wine as diverse as the landscape itself, creating a world-class cool climate Pinot Gris.

Vinification Details
The fruit was destemmed, then free-run juice was separated before gentle pressing of the remaining fruit. The juice was clarified, racked into stainless steel fermentation tanks and then inoculated with a range of yeasts to enhance complexity. A slow, temperature-controlled fermentation at 14-16°C was undertaken for few weeks. After the lees stirring wine was aged in tank to add softness and texture. The wine was racked and bottled young to retain the aromatic, crisp and elegant varietal characters.
