All our pigs are born outdoors at Packington. Our sows live their whole lives outside with plenty of space to roam, wallow and be sociable. When the piglets are weaned, they are moved into large outdoor paddocks. Here the piglets have the benefit of well bedded, cosy tents, while still being able to run around outside. A happy pig is a healthy pig!
At fourteen weeks of age, our piglets are moved into large, naturally lit sheds with a large outdoor area, where due to our low group numbers, we can ensure the welfare of the pig remains paramount. Tended by our farmers, the pigs are protected from the elements, with lots of space, natural light and natural ventilation, and deep straw beds.
Packington pigs are reared to the highest welfare standards and have been well recognised by butchers and the RSPCA Freedom Foods, as the best you can get. Our pigs develop and mature to produce the delicious meat you've come to expect from Packington. It may take longer to produce pigs in this way and cost a little more, but the results are worth it, and all our customers agree.
All our pork is prepared, hand cut and packed by Jon Thorner's, a Q Guild Master butcher. As a family butchery business, they understand the needs of the customer and their requirements enabling us to bring this truly superb product to you.

Packington Pork and fennel meat balls, tomato salsa and linguine pasta
Packington Pork Mince 380g
500g Onion
1 Fennel bulb
100g Soft white bread crumbs
5g tarragon
1 tin of chopped plum tomatoes
1 Glove garlic
50ml White wine vinegar
50g Caster sugar
200ml White wine
400g Linguine pasta
50ml Staffordshire rape seed oil
40g Parmesan, grated
1. Finely chop the onion and place 200g into a mixing bowl and the remaining 300g into a thick bottom pan.
2. Finely chop the fennel bulb and add to the mixing bowl of onions.
3. In another thick bottom pan add 25ml of the Staffordshire rape seed oil and quickly sweet off the fennel and onion mixture for 2 minutes without adding any colour, this can be achieved by continuously stirring or placing a lid on the pan.
4. Remove from the heat and place back into the mixing bowl, leave to cool.
5. Add the Packington Pork mince, soft bread crumbs and the tarragon leaf that has been roughly chopped.
6. Season with salt and pepper and mix together, at this stage be very firm with the mixture and do not be afraid to throw it around!
7. Form the mixture into 24 balls.
8. Add to the remaining onion in the thick bottomed pan the tinned tomato and the garlic glove that has been crushed, the white wine vinegar and sugar. Place onto a stove and cook until a thick consistency is achieved.
9. In a thick bottom pan add a little oil and seal off the Packington Pork meat balls until golden, add the white wine and reduce until the liquid has evaporated, add the tomato salsa and cook for a further 5 minutes. Ensure that the middles are piping hot before serving.
10. Cook the linguine as per manufactures instructions, drain and toss through the meat balls, serve with fresh parmesan.

Keep refrigerated below 5°C. Once opened, consume within 2 days. Cool leftovers to room temperature, refrigerate within 2 hours. Consume within 2 days. Suitable for freezing on day of purchase. Use within 1 month. Defrost fully before use, do not refreeze once defrosted.

Nothing amazing
The main part of the chop was pretty bland but the meat near the bone tasty, was looking forward to the crackling but most of the rind would not crisp up and was rubbery which made the dog happy :)
Tasty chops
Bought these on a flash sale even though the reviews were mixed. They were really tasty and a good size will definitely buy them again.
Mixed views
I'm not sure how to best review these. I order them regularly, and when they're good they're excellent. When they're bad they're full of bone shards and, in the last pack I received, no rind for crackling but just soft fat. I'll still keep buying them, I'm sure, because the options for rind on are very limited, but I am often frustrated upon receiving them.

I normally only buy meat from our Farmers' Market, but was unable to get there last month. These pork chops were a very good substitute. Good enough for me to buy again.

Each chop was horribly and unevenly cut, with no rind whatsoever. No wonder it was on a flash sale.
