ABOUT THE DISH
In our extravagant truffle mac'n'cheese, our chefs look to the Central Italian region of Umbria for inspiration. The Urbani family, from the regional capital of Perugia, has been dedicated to exceptional truffles (which are munificent in Umbria) with love & passion for six generations.
Whilst it's fair to assume that Constantine Urbani (who founded Urbani Truffles all the way back in 1852) likely wouldn't have recognised mac'n'cheese (this Italo-American staple came later), we believe he would've heartily approved of our chefs' recipe, which combines several varieties of Italian cheese with his descendants' sumptuous summer truffle.
This rich and truffle-laden mac'n'cheese has become a cult favourite for Pasta Evangelists customers, and comes with the recommendation of our 2 Michelin-starred chef Giancarlo Perbellini. Follow the instructions we include with your kit and enjoy a 5* pasta dish in 5 minutes.

Storage
STORAGE Like all fresh products, our artisan pasta has a limited shelf life. Keep chilled & consume by the date indicated.
FREEZING: Alternatively freeze before Use By date. Defrost overnight in the fridge before cooking.
Preparation and Usage
1. Preheat your oven to 200C and place a baking tray in the middle of the oven.
2. Take your pasta out of the fridge 10 minutes before cooking.
3. Remove the card sleeve and film from the pasta but leave it in its card tray.
4. Place the pasta in its card tray directly on the baking sheet and cook for 20 minutes, until piping hot.
5. Remove your pasta from the oven and allow it to rest for 5 minutes before serving.

just wish it wasn't so pricy...
Not sure about this
Nice pasta and cooked well. Not too dry like others have mentioned - the sauce was creamy. But Im not sure, it didnt have much of a truffle flavour and I found the cheese sauce weirdly sour. Maybe its meant to be that way? Its not for me though.
recipe has changed
The sauce was previously a lovely smooth cheese delight but has recently been replaced with a grainy roux, such a shame has gone from 5 to 1 star.

Feels like they have reduced the sauce and truffle. More dry and not like what it was before. Shame.
Urgh! I can\x27t stop devouring this
This is such a sumptuous meal to stick in the oven at the end of a long day at work. I confess I do even cook it and then decant into a baking tray and tell gullible friends I've rustled it up myself! Extravagant and cheesy - what more can you ask for. One for the truffle lovers.
AMAZING! Would definitely order again
I had a look at the reviews for this and I'm so happy I still ordered it. This was absolutely delicious and such a generous portion! The bigger pasta - I think rigatoni - was a delicious pairing. The sauce is not overpoweringly rich it's just cheesy and the truffle is such a nice edition. Although it is pricey it's definitely worth it if you have the self control could defo eat half and safe half for the next day! I will be ordering this again
