The Quandong Farm vineyard was planted in 1996, from 50-years-old Shiraz vine cuttings, and was the first Paxton vineyard to be fully converted to Organic practices in 2004. The site is named after a native Australian bush fruit. A strong sense of place defines the vineyard's characteristics. Sitting West facing on the Seaview Ridge, with soils of Shallow loam over limestone, this unique vineyard produces fragrant and aromatic fruit, with brightness and intensity.

History
Paxton is one of a kind. This organic and biodynamic winery was set up in 1979 by one of Australia's best known viticulturalists, David Paxton. The winery, based in McLaren Vale, consists of over 200 acres of premium vineyards, making it Australia's largest organic and biodynamic estate.
Regional Information
Quandong Farm is located a short distance to the north of McLaren Vale Township. Shallow loam over limestone soils gently slope towards the west. Elevation 70m -100m. Single cordon, hand pruned. Viticulture practices are fully certified organic and biodynamic.

Vinification Details
The grapes were handpicked and selector harvested at the optimum flavour and sugar equilibrium. 40% of the harvest was used as whole bunches. The ferment was 100% wild/ natural yeast spontaneous fermentation. The small-batch ferments were carefully plunged and pumped over for 14 days to extract colour, flavour and tannin structure. The ferments were pressed to new and mature French oak barries, where they were nurtured for 12 months prior to blending and bottling.

Superior Shiraz
Very popular in my household. And deservedly so. Smooth and not overly full-bodied. Excellent with a roast dinner.
