Chicken nuggets with pine nuts and Ponti Glaze with Lemon Juice
Ingredients
Ponti Glaze with Lemon Juice
400 gr thickly sliced chicken breast
250 gr breadcrumbs
150 gr pine nuts
2 basil leaves
3 eggs
2 tbsp grated Parmigiano cheese
oil for frying
salt and pepper
Method
Soak the chicken slices in water and salt for about three hours. Rinse the chicken breasts thoroughly in cold water, dry them with a paper towel and cut them into 1 1/2-inch pieces.
In a medium bowl, mix the eggs, Parmigiano cheese, salt and pepper together. In another bowl, mix the breadcrumbs, pine nuts and
chopped basil leaves together. Dip the chicken nuggets into the beaten eggs first, then coat with the breadcrumbs and pine nuts mixture.
Heat the oil in a large frying pan and fry the nuggets until golden-
brown and crisp. Drain them on paper towel, arrange on a plate and serve with a drizzle of Ponti Glaze with Lemon Juice.
