A creative approach to wellbeing through taste, spreading the Risotto Culture. Rustico Mix is a Grain Mix composed of Rice, Spelt and Barley, and full of natural goodness.
In fact, Spelt is similar to pearl barley, both are hearty, nourishing grains which absorb flavour like a risotto rice, just a bit more crunchier than the classic one.
Rustico Mix is more than risotto rice: its versatility lends itself to the creation of Risottos, Soups, Salads or as a stuffing for vegetables. It can be simply be cooked as a replacement in any rice recipe.

Preparation and Usage
1 Sauté the onion in the butter until soft. Add the rice and coat well until transparent.
2 Add the wine and stir until it has evaporated.
3 Add a ladleful of the hot stock and simmer. Add more stock when necessary. Continue in this way for about 12 mins.
4 Stir in the parmesan and the other ingredients if necessary, test for seasoning, cover and leave for 2 minutes.

Ingredients for 4 people: 250g Rice, Spelt an Barley, 200g feta cheese, 2 sprigs of fresh basil, 12 black olives, 1 teaspoon salted capers, 10 cherry tomatoes, 1 small onion, salt and pepper.
Cook the Rice, Spelt and Barley in plenty of salted water for 12 minutes. Drain and cool under cold running water. Pour into a salad bowl. Add the torn basil, the chopped cherry tomatoes, the olives and capers (remove the salt).
Slice the onion and add it to the rice salad. Cut the feta cheese into cubes and add it to the rice salad. Drizzle with oil, and season with salt and pepper.

This is my go to risotto- the 3 grain mix adds a considerable depth of flavour - always delicious but too rarely on offer.

Amazing Nutty Rice
This really is delicious! It keeps its texture and bite and has a lovely nutty taste. So much better than white rice which can go mushy. We made a spicy sausage risotto with it and was lovely.
