At Santa Tresa we don’t use pesticides! Not even organic. We only use very limited amount of Sulphur and Copper in the vineyard. Instead of manure (these are vegan wines after all!) we fertilise their vines using Favino that is fava bean that we grow ourselves and is extremely effective. We use a whole host of methods to combat diseases, like sexual confusion to treat the Tignola moth, and a variety of Bacillus that is a natural defence against several diseases like moths and mildew.

Tasting Notes
The minerality and freshness of the Grillo compliments the intensity and body of the Viognier. Bouquet of white fruits, that develops into notes of apricots & herbs. The palate has a wonderful minerality, well balanced with a softness on the finish.
History
Santa Tresa was established in 1697 and is located on a plain, with the Dirillo river to the north, Iblei mountains to the east and open sea to the south and west. Wine has shaped the lives of the people of Vittoria, who have lived and breathed the culture for over 3,000 years. The symbol is an important part of the brand represents “Sun and Gold” and dates back to medieval times. Sun and Gold are very much associated with Sicily - a land blessed by “golden light”.

Vinification Details
Both varieties are vinified in a similar way. We chill the grapes overnight in a refrigerated room to lower the temperature to 6-8°C, thereby protecting the aromatic characteristics of the grapes. The following day, grapes are gently destemmed and softly pressed. The must remains in a tank for one night at a temperature of around 10°C, allowing the natural sedimentation of all the solid particles to occur. Wine is moved into a stainless steel tank, where it ferments at 17-19°C for 10-12 days.

Very pleased with this wine. Good flavour with a bit of fizz. Refreshing.

A good hefty white
Does really well in support of a platter of French cheeses, lovely with roast pork or chicken, and just tart enough to have with fish. A good all-rounder.

Grew On Me
First taste, I wasn't sure, but after a few sips I quite liked it. Best of all it didn't give me hay fever like some wines do. Would buy again. 2020 vintage.

Fantastic
These Sicilian organic wine really are fantastic. This along with another fantastic red really do a lot more for the pound note. Great with something spicy, this went with a River Cottage inspired chicken curry made with coconut milk.
