Long regarded for the quality of their fine wool, the exquisite flavour and character of Merino lamb has been a well-kept secret, until now. Truly free-range, Merino forage on the vast alpine grasslands of the South Island of New Zealand. Because the best things take time, Merino mature more slowly than other breeds, the golden tussock and wild mountain thyme naturally influencing flavour. That is the definition of taste, elevated.

Product life guaranteed for 2 days excluding delivery day.
Storage
Keep refrigerated. Once opened, use immediately. Suitable for home freezing, freeze on or before use by date. Use within one month. Defrost thoroughly in a refrigerator before cooking and consume on day of defrosting. Do not refreeze.
Preparation and Usage
Allow the meat to sit at room temperature for 30 minutes.
Remove from packaging, brush rack with oil and season.
Place rack into a high heated pan and sear fat for 3 minutes.
Pre heat the oven to 220C/fan 200C/ gas mark 6.
Place on to a pre-heated baking tray fat side up and put in the centre of the oven. Cook for 15 minutes (rare), 20 minutes (medium) and 25 minutes (well done).
Remove from oven and cover with foil. Allow joint to rest for 10 minutes prior to serving.

I warned them it was on Flash sale and if it was tasty they were unlikely to get it again very sad faces as they both agreed it was DELICOUS, Ive never cooked rack of lamb before so I followed the instructions carefully we were all pleased with the results . It looked small but there was alot of meat hiding underneath !
best ever
First purchase of this rack of lamb and I loved it ! I actually split it into 3 as my hubby doesnt eat lamb. I cooked 3 chops for 20mins and they were so tender , only thing left on plate were 3 well cleaned bones. I accept that they are expensive but Ive been served far less appealing chops in restaurants and paid double or more. My rack consisted of 8 chops, as well trimmed as you would want them .

Very small and expensive for what you actually get. Saying that though, once cooked it is tasty. Just a shame you dont get a lot.
Microscopic
Trimmed rack they seem to have trimmed the meat instead of the fat. Tiniest cutlets Ive EVER seen. One nibble and its gone. Save your money!
