Verlina Throumba Extra Virgin Olive Oil 750ml

For a healthier option, try baking with Verlina extra-virgin olive oil instead of using butter. The result is a deliciously moist Chocolate Cake.

Ingredients
1 cup Verlina Throumba extra-virgin olive oil
1 and a half cups castor sugar
5 eggs (separated)
1 cup semi-skimmed milk (skimmed works too)
Half a teaspoon vanilla extract
250g dark chocolate
500g self-raising flour

Method
Chop chocolate into small pieces in a food processor and set aside.
Whisk egg whites until stiff and set aside.
In a large bowl and with an electric hand whisk, start beating olive oil and sugar. Then gradually add the egg yolks one by one, the vanilla extract, milk and flour.
Fold in the egg whites.
Pour mixture into a prepared large spring form cake tin and bake in a moderate oven for just under an hour.
