Preparation and Usage
Cooked parsnips are sweet and earthy, making them particularly popular in soups and roasts . Parsnips forge particularly strong 'taste liasions' with other sweet root vegetables, lemon, thyme, sage and butter.
SOUP: Parnsips become sweeter when cooked and are great pureed into velvety soups with spices and coconut milk, yoghurt or even cream.
BAKING: Use grated parsnips instead of carrots for a tangy twist to the classic carrot cake! Parnips bring extra moisture and natural sweetness to baked goods.
ROAST: Cut the parsnips into medium chunks, or slice lengthwise into halves/quarters. You can let them leave their organic skins on if you like! Toss to coat in oil, salt, spices and/or herbs, then spread out on a tray and bake at 200C for 30 min until tender and caramelised. Roasted parsnips can be tossed into salads with cooked grains, fresh greens, herbs and juicy fruits like oranges and tomatoes. They are even delicious munched 'au naturel' with a light yoghurt dip or as an understated accompaniment to roast meats.

Really tasty!
These parsnips were lovely and kept really well in the fridge.
A strange after taste
After roasting and eating the parsnips, they left a chemically taste in my mouth. Did not taste real parsnips. A disappointment.
Not impressed
3 gigantic parsnips that went a big soggy quite quickly and not much flavour. Were not practical to use either. I used 1.5 and had to throw the remainder out.
