Preparation and Usage
Cupcakes
160ml (2/3 cup) water
60g (4 tbsp) margarine (dairy free)
2 eggs or YesYouCan Vegan Egg Replacer
1 x 12 cupcake tray
Icing
50g (3 1/3 tbsp) margarine (dairy free)
Cooking Instructions:
Red Velvet Cupcake
1 Preheat oven to 160°C (fan forced) or 180°C (conventional oven).
2 Spray the tray with vegetable oil (if you have patty cases, place them in the tray).
3 Add eggs, margarine (softened) and water to a mixing bowl then add the red velvet cupcake mix.
4 Using an electric mixer, mix on slow speed for 1 minute. Scrape down sides of bowl.
5 Mix on medium speed for 1 minute.
6 Pour batter evenly into tray and bake for approx. 20-25 minutes*.
Cupcakes are baked if they bounce back when gently pressed at the peak.
7 Remove cupcakes from oven and place them onto wire rack to cool.

Frosting
1 Cream the 50g margarine (softened) in a small bowl using an electric mixer (on med-high speed) for 2 minutes until it is smooth and fluffy.
2 Reduce to slow speed and slowly add the frosting mix. Scrape sides of the bowl.
3 Using a knife or piping bag spread frosting evenly on the cupcakes.

Really strange taste and consistency Had to go into the bin as no one liked it even the non coeliac
Good texture but flavourless
Bought this hoping to make cupcakes for a friend who is celiac. Baked up nicely, but completely flavourless. Bears no resemblance to Red Velvet flavour whatsoever. I might try it again and add a big dose of extra cocoa to see if that helps. Agree with another reviewer to make your own cream cheese frosting and skip the provided mix.
Happy coeliac
As a coeliac this has given me a much needed cake fix. I used milk and butter and baked it as a cake for 45min instead. Spongy cake like consistency. A little flavourless, but with tea or milk it gives the illusion of being a normal cake. I'd buy it again. Make your own cream cheese frosting. No weird aftertaste either which is a massive bonus.
Light, moist gluten\-free sponge
I bought this mix to make a gluten-free treat for my daughter based on the reviews. I wasn't disappointed. Previously not had much luck as gluten free cakes often turn out more like biscuits. This was easy to make, and the result was well risen, light and moist. There isn't a huge amount of flavour but combines with the frosting to give a more than satisfactory sweet treat that baked well in heart shaped foil cases. Would buy again.
