There is muffin better than this baby-friendly birthday cake recipe. Creamy Greek style yoghurts are great mixed into muffin mixture for an added source of calcium and add a delightful creaminess to the batter.

Ingredients

  • 1 Egg, lightly beaten
  • 1 Large very ripe banana
  • 1 Pouch of Little Freddie Luscious Cherry Greek Style Yoghurt
  • ½ tbsp Olive oil, (plus extra for greasing)
  • 115g Plain flour
  • ½ teaspoon Bicarbonate of soda
  • 35g Cherries, destoned & chopped
  • 6 Raspberries, halved, To decorate

Method

Step 1

Preheat the oven to 160°c fan assisted/180°c/gas 4 and grease a mini muffin tin with a little olive oil.

Step 2

Lightly beat the egg in a mixing bowl, then add mashed banana, 50g of Little Freddie Cherry Greek Style Yoghurt (save the remaining yoghurt for decorating!) and olive oil. Mix well.

Step 3

Sieve in the flour and bicarbonate of soda then fold to combine. Depending on how large the bananas are, you may find the mix is a little thick. If it is, add a tiny dash of whole milk and stir again, until the mixture drops off a spoon. Stir through the chopped cherries.

Step 4

Divide the mixture between the mini muffin tin, then bake for 15-20 minutes, or until a toothpick comes out clean. Allow to cool.

Step 5

Once cool, use the remaining yoghurt to ice the tops and finish with half a raspberry. Serve and enjoy!

Step 6

Feel free to swap out the Cherry Greek Style Yoghurt for any of the other Little Freddie flavours
