Banana chutney

Ingredients

  • 2 tbsp of rapeseed oil
  • 1 onion, chopped
  • 2 cloves of garlic
  • 1 tsp of ground ginger
  • 0.5 tsp of turmeric
  • 0.5 tsp of ground allspice
  • 0.5 tsp of hot chilli powder
  • 4 bananas, mashed
  • 70 g of raisins
  • 130 ml of cider vinegar
  • 2 tbsp of light brown sugar
  • 1 tbsp of dark soy sauce

Method

  • Step 1

    Heat the oil in a pan and gently fry the onion until it softens – about 5 mins. Add the garlic and spices and stir.
  • Step 2

    Add the bananas, raisins, vinegar, sugar, soy sauce and a pinch of salt, then bring to the boil. Bubble gently for 15 mins – stir so it doesn’t catch, and add a dash of water if it feels like it is.
  • Step 3

    Transfer to a heatproof jar and eat straight away or leave the flavours to mellow. It will keep well in the jar, in the fridge.
