
Banana chutney

Ingredients
- 2 tbsp of rapeseed oil
- 1 onion, chopped
- 2 cloves of garlic
- 1 tsp of ground ginger
- 0.5 tsp of turmeric
- 0.5 tsp of ground allspice
- 0.5 tsp of hot chilli powder
- 4 bananas, mashed
- 70 g of raisins
- 130 ml of cider vinegar
- 2 tbsp of light brown sugar
- 1 tbsp of dark soy sauce
Method
Step 1
Heat the oil in a pan and gently fry the onion until it softens – about 5 mins. Add the garlic and spices and stir.Step 2
Add the bananas, raisins, vinegar, sugar, soy sauce and a pinch of salt, then bring to the boil. Bubble gently for 15 mins – stir so it doesn’t catch, and add a dash of water if it feels like it is.Step 3
Transfer to a heatproof jar and eat straight away or leave the flavours to mellow. It will keep well in the jar, in the fridge.
