Meaning ‘breadcrumbs’ in Italian, pangratatto, is a simple and delicious no-waste way of using up stale bread. We’re whizzing up leftover burger buns for a sesame seed spin – sprinkle over burrata, spaghetti or salad for extra crunch. Try with leftover brioche buns for a sweet and buttery version that is delicious sprinkled over puddings.

Ingredients

  • 3 seeded burger buns
  • 2 tbsp olive oil
  • 1 burrata

Method

Step 1

Tear the burger buns into a food processor or mini whizzer and pulse until they form breadcrumbs.

Step 2

Heat the oil in a large frying pan over a medium heat and tip in the breadcrumbs, a pinch of flaky sea salt and some freshly ground black pepper (see Tip). Fry until golden and crisp, stirring frequently for even colour.

Step 3

Serve straight away sprinkled over burrata or tip onto a plate to cool then transfer to a jar or airtight container and keep in a cool place for up to 3 days.

Tips or serving suggestions

Add 1 grated garlic clove to the breadcrumbs in step 2 for another tasty twist. Or, once cooked (step 2) flavour the breadcrumbs with 1 tsp chopped fresh herbs, the zest of ½ lemon, 1 tbsp toasted chopped nuts or 1 tsp toasted spices.
