Crunchy and light, this winter slaw features raw celeriac and fennel matchsticks in a fresh lemon dressing. It's perfect as a side dish, salad or paired with fish – try it alongside grilled mackerel fillets for a healthy seasonal supper.

Ingredients

  • 1 celeriac, peeled and cut into matchsticks
  • 1 bulb fennel, cut into matchsticks
  • 1 red onion, finely sliced
  • ½ lemon, juice
  • 1 handful fresh parsley, chopped
  • 4 tbsp walnuts, toasted and chopped
  • 2 drizzles extra virgin olive oil

Method

Step 1

Place the celeriac and fennel matchsticks in a large bowl.

Step 2

Add the red onion and the lemon juice. With your hands, mix the juice evenly into the vegetables (celeriac turns brown quickly, so this will prevent discolouration).

Step 3

Add the chopped parsley, toasted walnuts, and a good glug of extra virgin olive oil. Season well, mix and serve.
