Ingredients
- 250ml double cream
- 50g unsalted butter
- 2 pinches sea salt
- 250g 70% cocoa chocolate, finely chopped
- 50g cocoa powder, for dusting
- 1 tsp chilli powder, for dusting
Method
Step 1
Heat the cream, butter and salt in a pan. Remove from heat before it boils.
Step 2
Pour in the chocolate and stir to melt.
Step 3
Leave to cool and refrigerate overnight.
Step 4
When solid, scoop out the truffles with a melon baller.
Step 5
Mix the cocoa and chilli powder and lightly roll each one in the chilli cocoa powder mix.
