A great one to keep in the fridge or freezer for when you fancy something a little sweet, this ultimate Rocky Road recipe is one that the whole family will love. The digestives can also be substituted with hobnobs or shortcake, and the marshmallows with chopped up Turkish delight or jelly beans, for a sweet treat that’s as fun to make as it is to eat.

Ingredients

  • 200g milk chocolate, broken into small chunks
  • 200g dark chocolate, broken into small chunks
  • 150g unsalted butter, diced
  • 150g mini marshmallows
  • 150g digestive biscuits, roughly crushed
  • 80g Maltesers
  • 50g roasted chopped hazelnuts
  • 1 pinch sea salt flakes
  • 4 tbsp raspberry jam

Method

Step 1

Line a 20cm square tin with foil and set aside. Put the chocolate and butter into a medium, heatproof mixing bowl and set over a pan of gently simmering water on a low-medium heat. Ensure the bowl isn’t touching the water. Leave to melt, stirring often, for 10-15 mins, until smooth and glossy.

Step 2

Once melted, remove from the heat and stir in the marshmallows, biscuits, Maltesers and hazelnuts with a large pinch of the sea salt flakes.

Step 3

Spoon a third of the mixture into the tin, then dot over half the jam in small spoonfuls. Repeat until everything is used up, finishing with a layer of the chocolate mixture. Flatten the top and chill in the fridge for at least 3 hrs, or until needed.

Step 4

Remove from the fridge around 15 mins before serving and chop into pieces with a large knife.
