These Crab, Feta and Sesame Boreks from Turkish-Cypriot chef Selin Kiazim are perfect for summer get-togethers. Selin says, “You’re never far from some form of borek at a Turkish picnic or gathering. These filled pastries always go down a treat, and in this recipe, the crab meat teamed with slightly salty, creamy feta makes a really special combo.”

Ingredients

  • 100g white crab meat
  • 75g feta, crumbled
  • 1 salad onion, finely sliced
  • 1 tbsp finely chopped flat-leaf parsley
  • 1 tbsp finely chopped tarragon
  • 25g unsalted butter, melted
  • 1 puff pastry sheet
  • 1 egg, whisked with 1 tsp water
  • 5 tbsp sesame seeds (approx.)

Method

Step 1

Preheat the oven to 220°C/200°C fan/gas 7. Line 2 large baking trays with baking paper.

Step 2

To make 32 boreks, combine the crab, feta, salad onion, parsley, tarragon and melted butter in a bowl and mix well; season to taste.

Step 3

Roll out the pastry to give a 40cm x 40 cm square. Cut into 4 strips, 10 cm wide, then cut each strip into 4 to make 16 even squares. Halve each square to create 32 triangles. (Keep half the pastry chilled between sheets of baking paper while you work.)

Step 4

Place ½ tbsp of the crab mix on one half of each triangle. Fold over the other half to enclose the filling, then firmly pinch the edges to seal. Place the filled triangle parcels on the lined baking trays.

Step 5

Brush each one with a little egg wash and immediately sprinkle over the sesame seeds so they stick. Bake for 25 mins or until golden brown, turning the trays halfway for even cooking. Allow to cool. Serve at room temperature. The boreks will keep chilled in an airtight container for 3 days.

Tips or serving suggestions

Makes 32. Allow a little extra time for the boreks to cool before serving.
