Ingredients
- 150g dark chocolate chunks
- 2 x 180g boxes dates, pitted
- 4 tbsp crunchy peanut butter
- 25g pistachios
- ¼ tsp flakey sea salt
Method
Step 1
Melt the chocolate chunks into a heatproof bowl set over a pan of barely simmering water, making sure the water doesn’t touch the base of the bowl. Set aside to cool slightly.
Step 2
Meanwhile, line a baking sheet with non-stick baking paper. Spread the pitted dates in a single layer over the paper and press down with the tines of a fork to flatten and compact them together to about ½ cm thick sheet.
Step 3
Dot over the peanut butter, spread to an even layer then pour over the slightly cooled chocolate and spread to fully cover.
Step 4
Using a pestle and mortar, bash the pistachios into a crumb and sprinkle over the chocolate then freeze for 1 hr.
Step 5
Sprinkle with flakey sea salt then break up or chop to serve.
